Artichoke Aioli
Here’s a recipe for enjoying freshly harvested artichokes. Just make this easy dressing and dip in the artichoke leaves.
To prepare artichokes, you typically steam or boil them until tender and then eat them one leaf at a time (mostly just the fleshy lower part of the leaf until you get to the heart), usually dipped in butter or olive oil. My favorite way to enjoy them is with a simple aioli. Here’s the recipe:
Artichoke Aioli
1 liter of extra virgin olive oil
1 fresh egg
2 teaspoons salt (or to taste)
2 cloves garlic
Put all ingredients in a food processor and blend thoroughly.
