One really helpful resource is Deer-Resistant Landscaping, a 354-page book by wildlife/garden photographer and author Neil Soderstrom. This book covers both deer-repelling strategies (i.e., effective fences and sprays) as well as deer-resistant plants. Soderstrom draws from interviews with experts across all regions of the US for his plant recommendations and advice about other local herbivores; in the introduction he explains his desire and effort to avoid Eastern bias.
